NOTES
A native of WA, Tim Burvill moved to SA in 1993 to do the winemaking course at the Adelaide University Roseworthy campus. Having completed an Honours degree in oenology, he was recruited by Southcorp, and quickly found himself in a senior winemaking position responsible for super-premium whites including Penfolds Yattarna.
Old vine Barossa Shiraz, the older the better. While Shiraz was the mainstay of the Australian wine industry for most of its first century, in the Barossa the variety has always held a special mystique. One of the only premium international viticultural areas not ravaged by phylloxera in the 1800s, the Barossa remains as a living museum of the world’s oldest Shiraz vineyards. The winemaker has made the most of his years working with local growers, to isolate and to retain choice parcels of Old-vine Shiraz. Barossa Babe is treated to a warm fermentation in small open top fermenters followed by eighteen months maturation in a combination of new and prior use oak barriques.
TASTING NOTES
Black as the ace of spades. A brooding plum nose, which is soaring in berries and more berries along with a rich concentration of chocolate, black fruits, tobacco and licorice aromas. Sit down in an armchair and get comfortable, as this wine won’t be over in a hurry... Black, brooding fruit rule the palate which makes it a big, rich, lush wine, but also carries a degree of elegance within its exemplary Barossa styling, exquisitely rich black berry fruits and subtle spiciness, along a dreamy, flavour laden palate.
Much of this wine is made from 140 year old Barossa Valley Shiraz vines. Coupled with power and complexity of this creation from Mother Nature will continue to improve in the bottle over the next 15 years or more.
