NOTES

A native of WA, Tim Burvill moved to SA in 1993 to do the winemaking course at the Adelaide University Roseworthy campus. Having completed an Honours degree in oenology, he was recruited by Southcorp, and quickly found himself in a senior winemaking position responsible for super-premium whites including Penfolds Yattarna.

 

The Sauvignon Blanc is produced from Adelaide Hills fruit. It is mainly the altitude that is the key to the climate; with Mount Lofty and the Piccadilly Valley being much cooler than the city of Adelaide, only 25 minutes drive away. Stylistically the Adelaide Hills produces clean crisp whites, with great acidity. It is these naturally occurring flavours that Tim tries to capture in every bottle.

 

TASTING NOTES

Very pale straw with lime coloured overtones. There is a backbone of herbaceousness, around which are secondary aromatics of freshly squeezed lime juice, passionfruit, spice and flint. A wine that is certainly a case of what one can smell is also within the palate. It’s all mouth-watering fleshy flavours of grapefruit, lime juice and intense minerality. Baby powder, wet gravel and a hint of jalapeño pepper linger on the finish. The zippiness on the back palate truly winds the wine out nicely, leaving one licking their lips in anticipation of the next mouthful.
