NOTES
Located in Pays d'Auge, a part of Normandie well known for the quality of its agricultural products, the Dupont Family runs since 4 generations a 50 hectares Domain, of which 30 hectares of apple ciders orchards. The soils of the Domain, mainly marls and marly chalks, produce fruits with low yields that are rich and complex, that allows to produce a large range of traditional and innovative gastronomical products.
TASTING NOTES
The blend: 30% of sweet apples, mainly Rouge Duret, 30% bitter apples (Mettais, Saint Martin, Frequin and Binet Rouge) and 40% of apples with acidity, mainly Rambault. Apples are cropped manually. The colour is white with pale yellow shade; Limpid and bright. The nose is powerful, fine, fresh and complex with aromas of green apple and citrus fruits aromas, shades of sherry. Fresh, supple, round in mouth, substantial, very retro-olfactif, long and intense.
SERVING SUGGESTIONS
Aperitif: Very fresh, plain or on ice. Good base for cocktails.
During the meal: Serve at freezing temperature with smoked or marinated fishes.
Digestive: As a brandy in an iced up glass, or after coffee (pour in a hot cup).
Dessert & cooking: With plain chocolate cakes, apple sorbet. Buckling, sorbets, etc.
