What do a winemaker, a salesman, a garage door installer and a veterinarian have in common? They’ve all dreamed of owning their own brewery. Three years ago, Phil, Rohan, Cam and Mike decided to test the strength of their friendship by building a micro-brewery in Victoria’s Yarra Valley. They had never applied for a liquor license, let alone written a business plan, but in June 2007 Coldstream Brewery opened to the public.
While the four friends may seem unlikely candidates for such a specialised project, each was able to make a unique contribution. Phil (of Kellybrook Winery) is an award winning cider maker; Rohan managed the brewery’s sales and marketing strategy; Cam helped project manage the construction of the restaurant; and Mike was able to use his local contacts to source everything from stone for the bar, to a state of the art pizza oven which would not be out of place in Italy’s finest establishments!
A delicious medium-dry sparkling cider (7%), hand-crafted from local Yarra Valley apples using a traditional rack and cloth cider press. Cool fermentation of the resulting juice, followed by cold filtration ensures the crisp apple character is retained and in the glass, this pale straw coloured cider exhibits very fine bubble & mousse retention. For a truly refreshing experience, enjoy Coldstream Cider served over ice, in the fashion made popular during the hot English summer.
TASTING NOTES
Poured a very clear yellow; Nose was dominated by apples and spice with some winey characters also detectable, perhaps due to the high abv. Palate shows much of the same, apple and spice with the winey character popping up again on the back palate. Carbonation was rather lively, which served to enhance the perception of a dry finish. Excellent cider.
