Tasting Notes
Colour
Pale straw with a salmon hue.
Aroma
Fresh tropical salad, cool wet stone, reggiano, gun smoke.
Palate
Crunchy fruit salad rolling into a textured soft palate showing both richness and restraint.
Cellaring Potential
Such a fresh and textural wine is best enjoyed now and over the next 2-3 years.
Winemaking Notes
A milder growing season with regular rainfall proved a strong vintage for Pinot Grigio in the Upper regions of the Yarra Valley. The first batch of fruit was harvested on 27 February 2010 and whole bunch pressed to tank where it underwent a natural wild fermentation. The second and final batch of fruit was harvested on 17 March 2010 and whole bunch pressed into the same tank, which extended the fermentation time and further developed the textural elements of the wine. Post fermentation, the wine was matured on lees for 6 months, then stabilised, filtered and bottled on 29 September 2010
