DESCRIPTION
This wine is another stellar example of the quality winemaking approach employed at Taylors. The fruit selected for this wine was intense in flavour and from very low yielding vines. Harvest took place during April after extended periods of intensely hot weather throughout January and February 2001.
The berries were crushed and fermented at an even temperature. The wine completed fermentation in a mixture of new and 1 year old American oak hogsheads. Post malolactic fermentation, the wine was racked then returned to oak for 12 months. It was then bottled in early 2003.
TASTING NOTES
Intense red blacks with a brick red hue, the wine displays considerable intensity and well ripened fruit. Ripe cherry and plum characters are supported with coffee, cinnamon and black olive nuances. Barrel fermentation has provided the complex characters of chocolate and cashew nuts.
On the palate, the wine is rich with sweet fruit and a luscious mid palate. While being mouth filling and generous, the palate retains elegance and well balanced natural acidity. The palate shows the results of high quality oak use with overtones of vanilla and subtle tobacco characters. The wine has a long, persistent finish.
SUGGESTED FOOD MATCHING Rich, red meat dishes, black olive and mushroom frittata.

CELLARING NOTES Delicious upon release but will reward careful cellaring. Ideal to 2008 to 2010.
